It is now November and even though Denver hasn’t really cooled off that much yet, I have been itching to make some hearty belly filling foods.
I decided to compromise with Smitten Kitchen’s Mushroom Bourguignon; which isn’t really a compromise at all, just less filling with the mushrooms versus beef.
Another great factor was that removing the meat cut the time in half and made this about an hour meal, which as a result made it a super easy weeknight meal!
I paired this with mash potatoes and I would suggest the same! The flavor was rich from the wine and hearty from the vegetables.
